Tips for Baking Scramble Bars, Better Brownies and Other Cake Bars

  • Bake in the prescribed pan whose rim is usually 1-½" -thick. The texture of the brownies is affected by the thickness. If the pan is too big, you'll get dry and thin brownies.

  • To make the brownies even, use a spatula or the back of a spoon to spread the mix prior to baking.

  • To check if the brownies are done, insert a toothpick near the center of the batch; if the toothpick comes out with some moist crumbs, the brownies are done. The center will firm up upon cooling. Another hint that they are done is when they start to pull away from the sides of the pan.

  • Cut the brownies into squares when they are completely cooled to prevent them from crumbling.

  • If the brownies or bars will be eaten right away, keep them in the pan where they were baked. You can also store brownies in the pan, covered with aluminum foil or inside a tightly-sealed plastic container.

  • At room temperature, brownies and cake bars are good for about three days.
