  • To prevent water from foaming when cooking dried beans, add 1 tablespoon of vegetable oil to the water.

  • Dried beans triple in volume as they cook. So be sure to choose a casserole or pan of sufficient size.

  • When stir-frying noodles, be sure that the fire is of medium heat to ensure that the noodles won't harden. Adding a little water to the pan will also prevent noodles from burning.

  • Keep a small stiff brush near the sink to brush away dirt from veggies as well as for cleaning graters and strainers thoroughly.

  • Deboning poultry? Use a small, sharp boning knife and closely follow the line of the bone.

  • There are advantages to using either soft or hard margarine or butter. Soft margarine or butter is good for making mixes and cream. Hard margarine or butter is ideal for making pastries.

  • Buy spices in small packets. This is because spices lose their strength after a month or so.

  • Dont throw away the giblets! You can use them for flavoring stock and gravy. Dont use the liver, though, as it may be too bitter. Just remove any discolored areas, fry them, then slice and add to the gravy.
