Smart Baking

Baking entails discipline and technique. Here are a few tips to make it easier.

  • Use a dry measuring cup when measuring flour. Spoon flour into the cup until full and level the edge with a spatula or a knife.

  • Sifting is necessary with some recipes. Do this by passing the ingredient through a fine sieve or, if one is fortunate enough, mechanically. Also, sifting is necessary as sifted ingredients are lighter; this is important, as baking requires precise measurements.

  • Theres difference between cake flour and all-purpose flour. Cake flour is soft wheat flour; all-purpose is used generally for other types of cooking. These two types of flours cannot be used interchangeably.

  • Is kneading necessary? Kneading is a way of mixing and blending dough. It stimulates the formation of gluten, the rubbery substance in all-purpose flour that forms an elastic framework capable of holding the carbon dioxide bubbles formed by the yeast.

  • Baked bread is done if it gives off a hollow sound when the loaf is tapped.
