Adobo Combo (A combination of chicken and crispy pork adobo served with boiled egg, blanched swamp cabbage and garlic rice)

Ingredients:

For the chicken adobo:

1 k. chicken, chopped
200 ml. Soy sauce
250 ml. Vinegar
5 pcs. bayleaf
5 gms. peppercorn
100 gms. garlic
water, enough to cover
10 ml. Water

For the fried pork adobo:

1 k. pork 350 ml. vinegar
5 pcs. bayleaf
5 gms. peppercorn
100 gms. garlic
water, enough to cover
100 ml. oil

For the adobo combo:

70 gms. chicken adobo
700 gms. pork adobo
1 pc hardcooked egg
100 gms. kangkong
(swamp cabbage), blanched
1 cup garlic rice

 

Method

Step 1

To prepare the chicken adobo: Place all ingredients in a pot then braise chicken until tender. Strain and reduce the remaining braising liquid until ΒΌ of the liquid remains. Fry the chicken in a separate pan until brown. Put back the chicken in the sauce and set aside until ready for use.

Step 2

To prepare the fried pork adobo: Place all ingredients in a pot and braise pork until tender. Strain and set aside. Fry pork until brown and set aside. To assemble the adobo combo: Arrange the rice on the bottom of the plate. Place the boiled kangkong and boiled egg on top of the rice. Carefully arrange the chicken then top the pork adobo last. Drizzle the chicken adobo sauce around the plate. Serve.
