Apple Cinnamon Shortcakes2017-12-12

1-¼ cup Purefoods Baron All Purpose Flour
½ tsp. salt
1 tsp. Bake Best Baking Powder
1 tbsps. Sugar
1 tbsp. Magnolia Gold Butter, cut into small pieces
¼ cup Magnolia Fresh Milk
confectioner’s sugar for dusting
For the filling:
3 pcs. apples, peeled, cored & sliced
1 tub Magnolia Best Fruits Jam Apple Cinnamon
1 tsp. cinnamon, ground
2/3 cup heavy cream, lightly whipped
Preheat oven at 425ºF. Line a baking tray with Glad Cook and Bake Paper. Set aside.
To make the crust: Sift together flour, salt and baking powder into a mixing bowl. Stir in sugar then cut in butter into the flour mixture until it resembles fine breadcrumbs. Pour in milk and mix until it becomes a soft dough. On a lightly floured surface, knead dough lightly then roll out to ½"-thickness. Stamp out 4 rounds, using a cookie cutter. Transfer rounds to the prepared baking sheet. Bake for about 10 to 12 minutes or until lightly browned. Let cool.
To make the filling: Combine apples, jam and cinnamon in saucepan. Cook until apples are tender. Let cool.
To assemble: Split shortcakes in half. Spoon ¼ of the apple filling on the bottom half of the shortcakes then the cream. Place the other half of the shortcake on top. Serve dusted with confectioner's sugar.
