1 cup green papaya, shredded
3/4 cup cane vinegar or sukang puti
3/4 cup sugar
3/4 tbsps. salt
4 cloves garlic, thinly sliced
1 pc. ginger, julienned
4 pcs. onion, sliced
1 cup carrot, thinly sliced
2 pcs. green bell pepper, thinly sliced
2 pcs. red bell pepper, thinly sliced
Wash, grate and squeeze the juice out of the papaya for 2 to 4 times; set aside. Put together the vinegar, sugar and salt and let it simmer. Add the garlic, ginger, onion, carrots and peppers.
Let it simmer for a while. Add the papaya and mix thoroughly. Pour atsara in sterilized jars.
