Bacon Rumaki and Swift Sam Party Platter



For the bacon rumaki:

¼ cup cooking oil
½ cup soy sauce
1 tsp. hot sauce
1-½ tsps. pepper
1-½ tsps. vinegar
2 cloves garlic
4 to 6pcs. Swift Sam Jumbo Hotdogs
1 (4 oz.) can whole water chestnuts, sliced to suitable pieces
1 (400 gms.) pack Swift Delicious Bacon
brown sugar

For the deviled ham and egg:

3 hardcooked eggs, cooled & peeled
3 slices baked Swift Jamon de Bola, finely chopped
¼ cup pickle relish
¼ cup mayonnaise
1 tsp. prepared mustard
pepper to taste


Step 1

To prepare the bacon rumaki: Blend the first six ingredients for the marinade in a bowl. Cut each of the sausages into 8 pieces and the bacon into 2. Wrap each piece of sausage and water chestnut with half a bacon strip. Carefully fasten with wooden picks.

Step 2

Marinate the bundles for at least 30 minutes; drain and roll the bundles in brown sugar. Place the appetizers on a rack in shallow pan and boil for 5 to 7 minutes or until bacon is crisp. Add and arrange on the party platter. Yields 33 pieces.

Step 3

To prepare the deviled ham and egg: Cut eggs in half, lengthwise. Remove yolks; place in a bowl and mash with fork. Add ham, pickles, mayonnaise, mustard and pepper; blend well. Spoon eggyolk mixture evenly into eggwhites. Serve immediately, or cover and refrigerate until ready to serve. Garnish with a slight sprinkle of paprika. Or stir desired amount of fresh herbs (basil, parsley, or thyme) into the eggyolk mixture before spooning into whites. Add and arrange on the party platter.
