Basic Cupcake Decorating

Ingredients:

For the boiled icing:

3 cups sugar
1 cup sugar
1 tbsp. Syrup
1 cup egg whites
1 tsp. Cream of tartar

Method

Step 1

In a saucepan, cook the sugar, water and syrup.

Step 2

Cook until the soft ball stage.

Step 3

Whip the eggwhites until bubble stage.

Step 4

Add the cream of tartar and continue whipping until soft peak stage.

Step 5

Pour hot syrup in thin stream while whipping continuously.

Step 6

Continue to whip until very stiff.
