Bolu Kukus (Steamed Sponge Cake)



5 eggyolks
4 eggwhites
250 gms. Granulated sugar
300 gms. Flour
½ tsp. baking soda
1 cup soda water (7-up or sprite)
½ tsp. vanilla
1 tbsp. cocoa for coloring


Step 1

Line approximately 20 tin cups for steaming the cakes with parchment paper; set aside. In a bowl, mix the eggyolks, eggwhites, baking soda, sugar and vanilla to make a smooth batter. Add the flour and soda water. Mix well.

Step 2

Get a portion of the batter and place in a separate bowl. Add in the cocoa; mix well. Pour the white batter on the prepared tins.

Step 3

Top with 1 to 2 teaspoons of the chocolate batter. Repeat until all the batter has been used. Steam for 20 minutes until done.
