Bounty Fresh Savory Polenta with Fried Chicken



4 pcs. Red or yellow bell peppers, tops removed & deseeded
1 tbsp. unsalted butter
1/2 cup onion, minced
1- 1/2 tbsps. Garlic, minced
1 cup Marca Leon Polenta #14
3- 1/2 cups chicken broth
1/2 cup heavy cream
3/4 cup corn kernels
1/3 cup fresh basil chopped
3/4 tsp. salt
1/2 cup parmesan cheese, grated
Fried chicken:

1/4 k. Bounty Fresh chicken
breast, sliced into strips
salt & pepper to taste
dash of lemon juice
Marca Leon corn oil for frying



Step 1

To prepare polenta: Melt butter in a sauce pan set over medium heat. Add onion and garlic, cook until onion is translucent about 3 to 4 minutes. Add polenta and stir to mix. Slowly pour chicken broth and stir to combine. Add cream, corn, basil, salt and 1/4 cup parmesan. Cook stirring constantly with a wooden spoon until polenta becomes thick, about 10 minutes. Cool slightly and stuff onto prepared bell peppers. Place stuffed peppers on a pan, pop into a moderately hot oven for a few seconds. Keep warm.

Step 2

To prepare chicken: Season Bounty Fresh Chicken with salt, pepper and lemon juice. Fry in Marca Leon corn oil until golden. Drain on paper towels. To serve: Arrange chicken strips on a serving dish; surround with stuffed peppers.
