1 (4 kls.) slab U.S. Beef Short Plate
250 gms. Pickle relish
500 gms. Onions, chopped
350 ml. Soy sauce
750 ml. Tomato sauce
250 gms. Sugar
250 gms. Cane vinegar
500 gms. Mango puree
5 pcs. Chili fingers
salt & pepper to taste
Place the beef shortplate in a roasting pot.
Add the rest of the ingredients except the salt and pepper.
Cover with aluminum foil and put in the preheated oven at 300ºF for 3 to 4 hours until it becomes tender.
Separate the beef from the sauce.
To finish the sauce, season with salt, pepper and sugar.
Adjust the consistency of the sauce by adding stock or water and reduce to desired consistency.
To serve the beef: slice the beef into 1/2” -thickness. Grill. Occasionally baste with the sauce. Serve with the rice and the salad.
