Cambodian Lettuce Cups



150 g. ground pork
100 g. water chestnuts, julienne
50 g. onion, minced
30 g. garlic, minced
30 g. ginger, minced
50 g. peanuts, finely chopped
80 g. shredded coconut (dry)
2 tsps. soy sauce
2 tsps. patis
1 head lettuce, separated and cleaned
1 pc. mango, ripe, julienne
10 g. cilantro, shredded
5 g. dried chilies, minced


Step 1

Sauté onions, garlic, ginger until tender, then add ground pork. Add water chestnuts, peanuts and shredded coconuts and season with soy sauce and patis.

Step 2

In a mixing bowl, toss mango, cilantro, and dried chilies. Set Aside. On a leaf of lettuce, put 2-3 tbsp of ground pork mixture and top with mango sambal.
