Carp Cooked In Coconut Milk2017-12-12
1 tbsp. vegetable oil
1 stalk lemongrass, peeled & finely chopped
½ tsp. peppercorns, bruised
1 clove garlic, chopped & crushed
1 red chili, thinly sliced
½ tbsp. ground cinnamon
4 whole cloves, bruised
1 tbsp. nuoc mam sauce (fish sauce)
2 cups coconut milk
1 carp (large), cleaned gutted & then sliced
1 tbsp. cilantro, chopped
1 lime, juiced & reserve rind
Fry the lemongrass, peppercorns, garlic, chili, cinnamon and clove in the oil until aromatic (about 2 minutes). Add the nuoc mam sauce and stir gently.
Remove from the heat and stir in the coconut milk. Place the carp in a pan and pour over the coconut milk mixture. Add the lime juice and fresh coriander; stir. Cover and allow to simmer for 10 to 15 minutes or until the fish is cooked. Remove the fish and place on a serving dish. Garnish with the strips of lime rind.
Heat the sauce and boil for a few minutes to reduce and thicken. Strain until a plain milk is left. Pour this over the carp.
