Century Tuna Cakes2018-02-07
2 (184 gms.) Century Tuna Hot N’ Spicy or any variant, undrained
1 loaf (16 pcs) tasty bread, torn into the fine bits
½ cup each celery & onions, finely chopped
½ cup cornstarch
4 whole eggs
1 tbsp. rock salt
1 tsp. each liquid seasoning & pepper
1-½ cups all purpose flour
2 eggs beaten with
¼ cup Magnolia Fresh Milk
1-½ cups breadcrumbs
3 cups Magnolia Nutri-Oil for frying
2 cups Hunt’s Parmesan
Put all ingredients A in a bowl of a food processor, process until done. Form into patties (about 1/3 cup each) to make a total of 24 cakes.
(If good processor is not a available, mash mixture with hands until "pastry"). Put flour and breadcrumbs in separate trays. Beat eggs with milk.
Dredge each cake in flour then in eggs and lastly, in breadcrumbs. Deep fry cakes in Magnolia Nutri-oil and drain on Tork paper.
Arrange cakes on lettuce-lined platter. Garnish with cucumber and tomato
