Century Tuna Sisig



2-180 grams Century Tuna Calamansi, drain, save brine
2 teaspoons liquid seasoning
2 teaspoons juice of calamansi
1 tablespoon brown sugar
¼ teaspoon ground peppercorn
1-225g bar soft tofu, cut into ½ -inch cubes
¼ cup chopped violet onions
2 cold eggs
2 green finger chili for decor (siling haba)
white rice or pan de sal



Step 1

1. Prepare two hot cast iron sizzling plates. 2. Put Century Tuna and tofu on a plate. 3. Sauce: Mix in a small bowl the tuna brine, liquid seasoning, sugar and peppercorns.

Step 2

4. Put 2 tablespoons each of butter or margarine and chopped onions onone hot plate. 5. Add immediately tuna-tofu and sauce.

Step 3

6. Top with cold egg and finger chili. 7. Do the same with the other plate. Serve 8. Serve with fully white rice or pan de sal.
