Chicken And Chinese Cabbage Salad2017-12-19
1 Swift Sariwanok Chicken Breast
1 package frozen
¼ cup sesame oil
2 tbsps. Cider vinegar
4-½ tsps. Soy sauce
pinch of sugar & salt
¼ cup sliced green onion
1 cup bean sprouts
1 med. Head Chinese cabbage
¼ cup walnuts, coarsely chopped
Simmer chicken breast in salted water until tender, about 10 minutes. Skin, bone and cube (about 1-½ cups). Defrost snow peas and dry on paper towel.
To make the dressing. Shake oil, vinegar, soy sauce, ginger, sugar and salt in a screw top jar. Toss chicken, snow peas, green onion and bean sprouts with the soy dressing. Cover and refrigerate.
Slice enough cabbage to make 4 cups. Place in a bowl and and arrange chicken mixture on top. Sprinkle sesame seeds and walnuts over top. Toss slightly.
