Chicken and Vegetables with Basil



4 tbsps. olive oil (60 ml.)
4 boneless, skinless chicken breast, cut in strips
1 potato, cut into strips
2 onions, chopped
1 red bell pepper, cut into strips}
1 cup dry white wine
2 cups chopped, canned tomatoes
3 tbsps. fresh basil, chopped
freshly ground pepper



Step 1

Heat oil in large skillet. Add chicken strips and cook over medium heat for two minutes, stirring constantly. Using slotted spoon, transfer chicken to a bowl and set aside. Add potato, onions and red bell pepper to the oil remaining in the pan. Cook for two to three minutes, stirring constantly.

Step 2

Stir in wine and tomatoes. Bring to a boil, then lower heat and simmer for 10 minutes uncovered. Season to taste. Stir in chicken and chopped fresh basil. Heat through for one minute. Serve garnished with fresh basil leaves, if desired.
