Chicken Galantina with Longanisa Rice



1 pc. Magnolia Boneless Whole Chicken
1/3 cup Star Garlic Margarine

For the rice stuffing:

1/3 cup Star Garlic Margarine
¼ cup chopped onions
½ cup chopped carrots
200 gms. Magnolia Chicken Longganisa Mix
½ cup green peas
5 cups leftover rice
1 pc. egg, slightly-beaten
2 tbsps. spring onions, chopped
2 tsps. salt
1 tsp. sesame oil




Step 1

Melt Star Margarine in a wok. Saute onions and carrots. Add Magnolia Chicken Longganisa. Mix and cook for a minute. Add peas and cooked rice.

Step 2

Toss constantly and continue cooking for 5 more minutes. Make a well at the center and add beaten eggs. Cook egg and toss with the rest of the rice. Season with salt and drizzle with sesame oil. Let mixture cool.

Step 3

Stuff chicken with cooled rice stuffing. Do not overstuff. Extra stuffing can be served on the side.

Step 4

Brush chicken with margarine. Tie chicken legs together and transfer to a roasting pan. Roast in a turbo broiler at 300ºF for about 30 minutes and another 15 to 20 minutes at 350ºF. Brush again with margarine halfway through cooking time.
