Chicken Minestrone



1 whole Swift Chicken Breast, on the bone, skin removed
6 cups water or broth
2 carrots, sliced
2 celery stalks, sliced
1 onion, chopped
4 cloves garlic, chopped
½ cup canned peas
1 (250 gms.) pack Fiesta Spaghetti Sauce Sweet Blend
½ tsp. oregano
½ tsp. basil
¼ tsp. rosemary
¼ tsp. thyme
1-½ tsp. salt
1-½ cups Fiesta Elbow Macaroni



Step 1

Place the chicken in a heavy saucepan, add water and bring to a boil. Reduce heat and simmer for 12 minutes. Remove the chicken and set aside.

Step 2

Skim the foam from the top of the liquid and add all remaining ingredients except the pasta. Simmer for an hour. add Fiesta Macaroni and simmer for another 8 minutes or till just al dente.

Step 3

Strip the chicken meat from the bone, dice and add to the pot. Simmer for 2 mintues, correct seasoning. Serve with bread sticks or sliced baguette.
