Confection Affection (Parfait of Mocca-Ricotta Cheese with Dark and White Chocolate Sauce)2018-02-07
400 gms. Ricotta cheese
500 gms. Whipped cream
70 gms. Coffee powder (dissolved in 50 gms. Water)
200 gms. Powdered sugar
white chocolate sheets
dark chocolate sheets
dark chocolate sauce
white chocolate sauce
Mix sugar and eggwhites in a bowl and whisk in a bain marie over medium heat until fluffy. In a separate bowl, beat ricotta cheese until smooth and add whipped cream and coffee. Pour meringue mixture and blend well.
Transfer in tray at least 3/4" -thick and freeze overnight. Cut parfait in heart-shaped forms and place cut-out-forms of black and white chocolate sheets on each side. Serve with black and white chocolate sauce and strawberries.
