Corned Beef Sinigang



corned beef chunks
boneless shanks
1 med. onion (red)
2 stalks celery
2 bayleaves
2 tsps. rock salt
1 tbsp. black peppercorns
1 pack sinigang mix
1 bundle sitaw
1 bundle kangkong
1 labanos (native radish)
3 med. tomatoes, quartered
2 eggplants, sliced diagonally
8 pcs. small okra, sliced
2 pcs. green finger pepper
water to cover


Step 1

In a stock pot, place the corned beef chunks and boneless shanks, onion, celery, bayleaves, rock salt and black peppercorns. Simmer until the meat is tender and continuously add water to keep meat submerged.

Step 2

Remove the meat when it is tender. Bring the broth to a boil. Add sinigang mix.

Step 3

Add the native tomatoes, red onions, labanos and sitaw. After 2 minutes, add the okra, eggplant, sili and green finger pepper.

Step 4

Add the corned beef and simmer. Add the kangkong last.
