Corned Beef Sinigang



corned beef chunks
boneless shanks
1 med. onion (red)
2 stalks celery
2 bayleaves
2 tsps. rock salt
1 tbsp. black peppercorns
1 pack sinigang mix
1 bundle sitaw
1 bundle kangkong
1 labanos (native radish)
3 med. tomatoes, quartered
2 eggplants, sliced diagonally
8 pcs. small okra, sliced
2 pcs. green finger pepper
water to cover


Step 1

In a stock pot, place the corned beef chunks and boneless shanks, onion, celery, bayleaves, rock salt and black peppercorns.

Step 2

Simmer until the meat is tender and continuously add water to keep meat submerged.

Step 3

Remove the meat when it is tender. Bring the broth to a boil. Add sinigang mix.

Step 4

Add the native tomatoes, red onions, labanos and sitaw.

Step 5

After 2 minutes, add the okra, eggplant, sili and green finger pepper. Add the corned beef and simmer. Add the kangkong last.
