Curried Chicken Canapes



2 cups chicken, chopped then boiled
1/2 cup apple, diced
1/4 cup celery, finely diced
1/4 cup almonds, slivered, toasted
1/4 cup pineappled tidbits, drained

For the salad dressing, combine:

2 (125 gms.) tubs Nestle Creamy Yogurt, Natural
2 tbsps. mayonnaise
1/4 cup Nesvita Pro-Weight
Management Non-Fat Milk
1 tsp. Maggi Magic Sarap
1/4 tsp. salt
1/4 tsp. white pepper
3/4 tsp. curry powder
2 cups lettuce leaves, shredded
1 long baguette, thinly sliced & toasted
1/4 cup almonds, slivered, toasted


Step 1

Combine the chicken, apple, celery,, almonds and pineapple in a bowl. Pour the prepared salad dressing onto the chicken mixture and mix until well combined. Line some shredded greens onto a baguette slice and top with a heaping tablespoon of chicken salad.

Step 2

Top with a sprinkle of almonds. Serve immediately.
