Fried Camembert With Grape and Mackerel Filet Escalivada2017-11-10
300 gms. Camembert cheese
2 pcs. Eggs
1 cup flour
2 cups Japanese breadcrumbs cooking oil
200 gms. Green grapes, seedless & cut into half
1 cup olive oil
½ cup black olives
¼ cup balsamic vinegar
2 tbsps. Basil, chopped
salt & pepper
Cut Camembert into cubes.
Dredge in flour, dip in eggwhites, roll in breadcrumbs and deep-fry until light golden.
Drain excess oil in paper towels and set aside.
To prepare the salad: Mix grapes, olive oil, black olives, basil, balsamic vinegar, salt and pepper together. Serve grape salad with mesclun and top with fried Camembert cheese.
