Fruits in Pandan Cinnamon Syrup2017-09-29
2 pandan leaves tied into a knot
2 cups water
1 cup sugar
½ cup bottled cherries, sliced into halves
1 red apple, skin on, cubed
1 green apple, skin on, cubed
1 pear, skin on, cubed
½ cup green seedles grapes
½ cup red seedless grapes
½ cup confectioner’s sugar
1 (250 gms.) Nestle All Purpose Cream, chilled
cashew nuts, coarsely crushed
Make pandan syrup by boiling pandan leaves in water with sugar.
Boil until sugar is completely dissolved.
Set aside to cool.
Discard pandan leaves.
In a bowl, combine all fruits and toss into the pandab syrup.
Keep in the refrigerator until ready to serve.
Whip confectioner's sugar and Nestle All Purpose Cream until stiff.
Transfer on a piping bar and keep in the refrigerator.
Line an individual container with crushed cashew nuts.
Scoop fruit mixture on top of the cashew nuts.
Top with whipped cream and dust with cinnamon powder before serving.
