Grilled Pescado



4 pcs fish fillets (bass, labahita, tilapia, or any other firm white fish will do)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 cup chunky mango-ginger sauce
Chunky Mango-Ginger Sauce
1 tbsp olive oil
2 cups red onion, finely chopped
2 cups ripe mango, cubed & peeled
1 cup tomato, chopped
3 tbsps fresh ginger, minced and peeled
2 tbsps garlic minced (about 6 cloves)
1/2 cup fresh lime juice (about 2 limes)
1/4 cup orange juice
1/4 cup dry sherry
3 tbsps brown sugar
3 tbsps white vinegar



Step 1

Heat oil a large skillet over medium-high heat. Add onion, saute 7 minutes, stirring frequently. Add mango, tomato, ginger and garlic; cook 5 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer 20 minutes.
