Herbed Omelet with Mushrooms, Ham and Cheese2017-10-23
2 tbsps. butter or margarine
1 cup sliced mushrooms
1/2 cup diced ham or vienna sausage
6 pieces eggs, slightly beaten
1/2 cup evaporated milk
3 tbsps. chopped parsley or green onions (optional)
1/2 tsp. salt
1/2 cup cottage cheese, drained
dash of pepper
Melt the butter or margarine in a pan and sauté mushroom and ham.
Combine the eggs, evaporated milk, chopped parsley and seasonings.
Pour into the mushroom-ham mixture and cook over low heat until almost set.
Spread the cottage cheese over one side of the omelet.
Slide the omelet on to a plate and fold over. Serve hot.
