1-2 kls. fish head (tuna, etc.)
½ cup soy sauce
½ cup sugar
¼ cup butter
2 tbsps. sinigang mix
1 tsp. ground pepper
1 big head garlic, crushed
Double up foil twice as big as the fish head. Put fish at the center then add the other ingredients. Seal foil. Put on gas barbecue grille.
Cook for 10 minutes per side. Check with fork if fresh flakes easily.
Or bake fish in a tray with foil at 350ºC F or 350ºF C for 40 minutes. Serve with pickled papaya (atchara) with the drippings as sauce.
