Kare-Kare (Oxtail in Rich Peanut Sauce)

Ingredients:

3 cups buntot ng baka (oxtail), cleaned and cut into serving pieces
1 tsp. garlic, crushed
1 pc. onion, sliced
1 cup eggplant, cut diagonally into 1″ lenghts
1 cup sitaw (long green beans), cut into 2″ pieces
1 bundle pechay (bok choy)
1 pouch Mama Sita’s Kare-Kare
1 tbsp. cooking oil
1/2 cup bagoong alamang (Sauteed shrimp fry)

Method

Step 1

Boil oxtail in 8 cups (2 litrs) water and simmer until meat is tender leaving about 1 1/2 cup (375mL) stock. Set aside.

Step 2

Sauté garlic and onion. Add oxtail, and Mama Sita's Kare-kare (Peanut Sauce) Mix dissolved in 1 cup water. Add remaining stock. Stir and simmer for 2 minutes. Add eggplant and string beans. Simmer for 3 minutes. Stir once in a while to prevent sauce from sticking to the pan. Add bok choy and simmer for 2 minutes or until vegetables are done. Serve with bagoong alamang (sautéed shrimp fry.)

Step 3

Variation: Pressure cook 1/2 kg. oxtail for 45 minutes to 1 hour with 3-4 cups water.
