Key Lime Pie



3 large eggs
1 cup granulated sugar
¼ cup all purpose flour
3 tbsps. Cornstarch
¼ tsp. salt
2 cups water
1 tbsp. butter
¼ cup key lime juice
lime peel, grated
1 9″ -pie shell, baked
¼ tsp. cream of tartar
5 tbsps. sugar


Step 1

Separate the eggyolks from the eggwhites; set aside whites . Beat eggyolks in a bowl .

Step 2

In a saucepan, combine 1 cup sugar, flour, cornstarch and salt over medium heat . Gradually stir in the water . Stir constantly until thickened . Gradually stir about 1/3 of the mixture in the beaten eggyolks .

Step 3

Stir mixture into the remaining hot mixture in the pan . Continue cooking over low heat; continue stirring . Stir in butter, lime juice, peel and cool slightly . Bake in a preheated oven at 425ºF for 5 minutes . Whisk the eggyolks into the condensed milk . Add the lime juice little by little until the mixture starts to thicken . Pour into the pie shell.
