Layered Eggplant Casserole

½ k. eggplant
½ cup onions, chopped
1 tbsp. Magnolia Cheddar Gold Butter
½ cup Magnolia Cheddar Cheese, grated
2 pcs. Eggs, beaten
1/8 tsp. hot sauce
½ tsp. salt
½ tsp. pepper
2 tbsps. Magnolia Quickmelt Cheese, grated
1/8 tsp. paprika
1 cup croutons, for topping



Step 1

Preheat oven at 350ºF.

Step 2

Slice eggplant into ¼"-thick slices.

Step 3

Grill until tender; set aside.

Step 4

Saute onions in a bowl then add in cheese, eggs, and hot sauce.

Step 5

Season with salt and pepper.

Step 6

Toss in mix.

Step 7

Arrange a layer of the eggplants in the bottom of an oven proof baking dish.

Step 8

Pour 1/3 of the egg mixture then make 2 more layers of eggplant and egg mixture ending with a layer of the eggplant slices.

Step 9

Sprinkle 2 tablespoons of grated Quickmelt cheese and paprika.

Step 10

Bake for 30 minutes or until knife inserted comes out clean.

Step 11

Top with croutons before serving.

Step 12

Makes 4 servings. Approximately 170 calories per servings.
