1 cup cake flour
1 cup white sugar
1 tsp. baking powder
1 tsp. vanilla
6 pcs eggs (separate yolk from white)
½ cup vegetable oil
1 tsp. cream of tartar
Preheat oven to 350ºF. In a bowl, sift the flour and baking powder; set aside.
In another bowl, beat the eggwhite and cream of tartar until meringue-like in consistency. Add the sugar gradually while beating. Add vanilla and vegetable oil. Add the egg yolks one at a time while beating continuously. Add the cake flour and baking powder and continue to mix.
Pour the mixture in a greased muffin pan (about 2/3 full). Bake in the oven for 12 to 15 minutes or until golden brown.
