For the cake:
1 (230 gms.) box Maya Oven Toaster Banana Cake Mix 150 gms. Ripe mangoes, chopped
For the puree topping:
150 gms. Ripe mango
½ cup sugar
1 tbsp. Fresh lemon juice
pinch of salt
¼ cup unsalted butter, cut into small pieces
1 cup whipped cream, chilled
Prepare 1 box Oven Toaster Banana Cake Mix according to package directions.
Substitute mango for banana in the ingredients and use 4 ensaymada molders instead of a loaf pan.
Bake as per package directions, 2 molders at a time. Set aside.
To prepare the topping: Blend the firs 4 ingredients. Add the eggyolks; puree for 15 seconds longer. Cook puree until smooth and thickened. Whisk in butter, 1 piece at a time. Cool. Mix in the chilled whipped cream. Use as icing for mango cake. Decorate as desired.
