Margheritta Pizza



For the topping:

1/8 k. tomatoes, cored
3 pcs. basil basil leaves
2 cloves garlic, crushed
1 tbsp. tomato paste
2 tsps. extra virgin olive oil

For the base:

1 pc. pizza base (1″ x 12″)
3 tbsps. Extra virgin olive oil
1 cup mozzarella, chopped
9 small basil leaves



Step 1

Puree the tomatoes and basil.

Step 2

Stir in the garlic, tomato paste and olive oil. Season to taste.

Step 3

Allow to rest for half an hour to enable the flavors to blend.

Step 4

To prepare the pizza: Drizzle the pizza base with olive oil. Follow with the above sauce. Scatter the mozzarella on top and drizzle anew with remaining olive oil. Place in the oven (at very high heat). Cook for 12 minutes, or until the base is light brown and the topping is cooked. Before serving, drizzle anew with oil and scatter the remaining basil leaves on top.
