Oatmeal-Coconut Cookies

  • Yield : 14 dozen cookies


2 cups butter or margarine
2 tsps. vanilla
2 cups white sugar
2 cups brown sugar, firmly-packed
4pcs. Eggs
3 cups all-purpose flour
1 tsp. salt
2 tsps. baking soda
6 cups quick oats
1-½ cups flaked coconuts


Step 1

Cream together butter and vanilla. Add sugar gradually. Continue beating until fluffy.

Step 2

Add eggs one at a time, beating after each addition. Sift together all dry ingredients and stir into the creamed mixture. Mix oats and coconut flakes.

Step 3

Drop batter by the teaspoon at 2" -intervals onto well-greased cookie sheet. Bake at 350ºF for about 10 minutes. Cool cookies in a wire rack.
