Orange and Passion Fruit Sorbet (Entremet)2017-11-22
1 cup fresh orange juice
including its zest passion fruit puree
3 cups syrup (2 cups water, 1- 2/3 sugar, 1- ½ tsps. Gelatin powder, ¼ cup + 2 tbps. Light corn syrup)
2 tbsps. Meringue (¼ cup eggwhite, pinch of salt, 1 cup sugar)
Put ingredients altogether in a bowl and warm over a pan of simmering water until the sugar is dissolved. Transfer to a mixer and beat until stiff peaks are formed.
To prepare the sorbet: Place syrup in a saucepan and steep orange zest for 15 minutes. Cool. Add the rest of the ingredients. Strain then freeze in an ice cream machine. Do the same with the passion fruit but skip the steeping part. Place sorbet in individual cups before serving.
