Pasta Chorizo



2 tbsps. Olive oil
1 tbsp. onion, chopped
1 tsp. garlic, chopped
2 tomatoes (large), peeled & seeded
1 pc. bayleaf
2 tbsps. Tomato puree
ΒΌ cup water or vegetable stock
80 gms. chorizo, chopped
1 tsp. Parmesan cheese, grated
salt & pepper to taste
spaghetti noodles, cooked


Step 1

Heat oil and saute onions, garlic and tomatoes. Add bay leaf and continue to cook until desired consistency.

Step 2

Stir in tomato puree and stock. Season with salt and pepper.

Step 3

Toss spaghetti into the sauce, then place in a hot plate; set aside. Fry the chopped chorizo. Top pasta with chorizo and parmesan cheese.
