Pasta with Mussels



350 gms. bow-tie or shell-shaped macaroni
1 k. fresh mussels
1 large onion, chopped
3/4 cup red wine
2 tbsps. Olive oil
30 gms. butter
125 gms. button mushroom, sliced
2 to 3 cloves garlic, crushed
2 (425 gms.) cans Sunbest Diced Tomatoes
1 tbsp. Sunbest Tomato Paste
2 tbsps. fresh basil leaves, chopped
2 tbsps. fresh parsley, chopped
1 bay leaf, crushed pinch of pepper



Step 1

Thoroughly clean the mussels and discard any open shells .

Step 2

In a large saucepan, place mussels, half the onion and wine .

Step 3

Cook for 5 minutes until mussels open .

Step 4

Strain, reserving liquid; set aside .

Step 5

In the same pan, heat oil and butter over moderate heat .

Step 6

Add remaining onions with the mushroom and garlic .

Step 7

Cover and cook .

Step 8

Add undrained Sunbest Diced Tomatoes, reserved mussel liquid, Sunbest Tomato Paste, basil, parsley, bay leaf and pepper to taste .

Step 9

Simmer uncovered stirring occasionally until sauce is thickened .

Step 10

Prepare the pasta according to package instructions .

Step 11

Stir in thickened sauce and reserved mussels and heat through .

Step 12

Serve with crusty bread.
