Pavlova with Seasonal Berries2017-11-22

3 pcs. Eggwhites
1/2 cup granulated sugar
1 tsp. white wine vinegar
1 tsp. cornstarch
1/4 cup caster sugar
1- 1/4 cups whipping cream
1/2 cup kiwi, sliced
1/2 cup strawberries
1/2 cup blueberries
Whip eggwhites until soft pakes.
Gradually add 125 grams caster sugar and continue whipping until soft peaks form.
Mix the white wine vinegar with cornstarch and add 50 grams caster sugar.
Fold into the eggwhite mixture.
Shape into a nest of about 5 cm.
on a sheet tray lined with Glad Cook 'n' Bake paper.
Bake at 150˚ or 300˚F for 1 hour.
Turn the oven off and leave the meringue to dry out and cool.
To serve: Place meringue on serving tray. Whip the cream and fill the meringue shell no earlier than 1 hour before serving. Garnish with fresh fruits.
