Pescado Con Fideos (Fish with Pasta)



2 tbsps. Olive oil
¼ cup onions, chopped
1 clove garlic, chopped
1 cup tomatoes, seeded then chopped
¼ cup green bell pepper strips
4 cups fish broth
pinch of ground cumin
pinch of saffron
pinch of paprika
salt to taste
200 gms. uncooked spaghetti
200 gms. fresh prawns, peeled & deveined
250 gms. clams, cleaned well
½ cup frozen green peas
¼ cup white wine
2 (184 gms.) Century Tuna Chunks Spanish Style, drained
parsley, chopped, for garnish



Step 1

Heat olive oil in a large pan.

Step 2

Saute onion, garlic, green bell pepper and tomatoes.

Step 3

Leave to cook for 10 minutes until reduced.

Step 4

Add the broth to the tomato mixture and bring to the boil.

Step 5

Stir in the cumin, paprika, saffron, salt and pasta.

Step 6

Now add the clams, prawns, green peas and white wine.

Step 7

Lower the heat and simmer for 6 to 8 minutes until the pasta is tender.

Step 8

Stir in the tuna.

Step 9

Remove from heat, cover and leave to rest for 5 minutes.

Step 10

Sprinkle with chopped parsley on top.

Step 11

Serve with breadsticks.
