Pink Salmon and Spinach Parcels with Tomato Salsa

Ingredients:

1 (213 gms.) Century Pink Salmon, drained & bones removed
1 cup spinach; chopped, blanched & drained well
½ cup cottage cheese drained
1 tsp. lemon juice
1 tsp. lemon juice
1 tsp. salt
¼ tsp. pepper
lumpia wrappers
butter melted

For the tomato salsa:
10 pcs. ripe tomatoes deseeded & chopped
¼ cup cilantro, chopped
½ cup onion, chopped
½ cup green bell pepper, chopped
1 tbsp. lemon juice
1 tsp. Tabasco
2 tsps. chili powder
1 tsp. salt

 

Method

Step 1

In a bowl, combine salmon, spinach and cottage cheese. Add lemon juice, salt and pepper. Brush lumpia wrappers on both sides with butter. Place filling and fold into triangles. Bake in a pre-heated oven at 350ºF for 30 minutes or until golden.

Step 2

To prepare the salsa: Combine all the ingredients in a bowl. Serve with baked parcels. Makes 36 pieces.
