Pink Salmon On Grilled Foccacia

  • Yield : 2 sandwiches


1 (213 gms.) can Century Pink Salmon, drained, skin & bones removed
2 tbsps. Lemon juice
¼ cup olive oil
¼ tsp. ground pepper
2 med. Tomatoes, sliced & grilled
fresh lettuce leaves
foccaccia (bread), grilled

For the dressing:

½ cup natural yogurt
½ tsp. dill leaves
salt & pepper to taste


Step 1

Place salmon in a bowl and break salmon into large chunks.

Step 2

Marinate in lemon juice, olive oil and pepper.

Step 3

Let stand for 30 minutes.

Step 4

For the dressing: Mix together yogurt, dill leaves and season with salt and pepper. To assemble: Split foccaccia into half. Arrange lettuce leaves and tomatoes on top of the other half. Top with salmon and prepared dressing. Sandwich with the remaining half. Serve.
