Poached Hainanese Chicken



1 k. magnolia Fresh Chicken (whole)
1 tbsp. Rock salt
½ cup ginger, sliced
2 pcs. White onion, quartered
6 stalks lemongrass, pounded
1/3 tbsp. Pepper
salt to taste
3 liters water


Step 1

Rub chicken with rock salt and massage for 5 minutes.

Step 2

Place half of the ginger, onions, lemongrass, salt, pepper and water in a stock pot then stuff the other half inside the chicken and bring to a boil.

Step 3

Put in chicken and let boil for 15 minutes.

Step 4

Turn off heat and let stand for another 40 minutes.

Step 5

Remove chicken and submerge into an ice bath for 10 mintues.

Step 6

Remove from ice then cut up in serving pieces.

Step 7

Serve with dipping sauces and star rice.
