Roast Magnolia Chicken Adobo



1 whole Magnolia chicken (about 1-½ kilos), remove neck, wing tips, top of chicken ass; separate skin with your fingers

Rub chicken with mixture of:

¼ cup crushed garlic, skin on
¼ cup brown sugar
¼ cup Supremo vinegar
¼ cup Magnolia Nutri-Oil
½ cup soy sauce
1 tbsp. whole peppercorn
1 bay leaf, torn



Step 1

Tie glass with a string. Tuck into wings. Roast at 350ºF (175ºC) covered (use orange "Dutch" oven or any pan available) for 1 hour. Remove pan cover.

Step 2

Put 6 big red salad tomatoes on pan. Continue cooking chicken and tomatoes for 40 minutes more. Serve on banana leaf-lined plate or banana leaf-design plate.
