Seafood And Beer Batter Sampler

  • Yield : 4 platters


2 pcs. Apple, peeled, cored & quartered
1 tsp. cinnamon
2 tbsps. White sugar
½ k. tilapia fillet, cut into strips
½ k. squid, peeled
salt & pepper to taste
Magnolia Nutri-Oil for deep frying

For the beer batter:

3/4 cup all purpose flour
½ cu Cervesa Negra
2 pcs. eggs, slightly beaten, whites separated
2 tbsps. Magnolia Gold Butter
¼ tsp. chili powder
¼ tsp. cayenne pepper
salt to taste

For the tartar sauce:

¼ cup mayonnaise
2 tbsps. pickle relish
1 tbsp. capers, chopped
salt & pepper to taste



Step 1

Toss apples with sugar and cinnamon; set aside.

Step 2

Prepare batter by combining flour and salt in a bowl.

Step 3

Beat eggyolks with beer in a bowl. Beat eggyolks with beer in another bowl then pour into flour and salt mixture. Stir until smooth.

Step 4

Add Magnolia Butter. Mix well.

Step 5

In another bowl, beat eggwhites.

Step 6

Season squid and fish fillet with salt and pepper.

Step 7

Dip apples in eggwhites then in batter.

Step 8

Deep fry until crisp and golden brown.

Step 9

Do the same with the fish and squid.

Step 10

Dip the apples first in the batter and cook in oil before the seafood.

Step 11

Drain in paper towels.

Step 12

Make the seafood sauce by mixing together all ingredients in a bowl.

Step 13

Cover and refrigerate until ready to use.

Step 14

Arrange fried apples, fish and squid in a platter with the sauce on the side.

Step 15

Serve while still hot.
