Seafood Noodle (Lad Na)



200 gms. flat noodle (big), hofan noodles
1 tsp. dark soy sauce
5 cups soup stock
10 pcs. shrimp, peeled & deveined
1 tsp. garlic chopped
3-4 tbsps. fish sauce or patis
2 tbsps. oyster sauce
1 tsp. yellow beans
1-2 tbsps. sugar
2 tsps. vinegar
2 tsps. cooking wine
3 tbsps. cornstarch
3 tbsps. tapioca flour
broccoli leaves
pinch, white pepper


Step 1

Soak noodles in water for 30 minutes or more.

Step 2

Stir-fry the noodles and add dark soy sauce. Place on a plate and set side.

Step 3

Sauté garlic and fermented yellow beans.

Step 4

Add 1-1/2 tablespoons cooking wine, chicken stock, sugar, fish sauce and vinegar.

Step 5

Mix together cornstarch and double-A powder with 2-1/2 tablespoons water. Pour into the cooking mixture.

Step 6

Add squid and simmer for a few minutes more. Season with salt and pepper.

Step 7

Place the mixture on top of the noodles and serve with chili powder and sugar as condiments.
