Seeds of Desire (Banana Poppy Seed Ice Cream on Dragon Fruit Bowl)2018-02-07
225 gms. Granulated sugar
10 pcs. Eggyolks
720 ml. fresh milk
480 ml. heavy cream
910 gms. Ripe bananas
¼ lime, juice only
55 gms. Poppy seeds
80 ml. Frangelico liqueur
10 pcs. Med. Dragon fruit
Beat the sugar and eggyolks lightly until blended. Heat milk and cream to scalding point, stirring constantly, gradually pour the hot liquid into the egg mixtue.
Place over simmering water and continue to stir with the wire whisk, heat until the custard thickens enough to coat a spoon. Do not overcook and break the custard.
Set aside to cool at room temperature, then cover and refrigerate until well chilled. Peel the bananas and puree with the lime juice. Stir the banana puree into the custard together with the poppy seeds and liqueur.
Process immediately in an ice cream maker, according to manufacturer's directions. Place in a bowl and then cover and store the ice cream in teh freezer. To assemble: Cut the dragon fruit in half portion with a scooper. Fill in with scooped banana poppy seed ice cream and serve. (Optional: May be served with strawberry or chocolate sauce)
