Sole Fillet (At the Spiral)2017-12-12
6 pcs. fillet of sole
1 tsp. salt
1 tsp. white pepper
3 green onions or scallions, chopped
6 tbsps. Melted butter
1 cup dry white wine
2 tbsps. Parsley, chopped
1 tsp. thyme
3 bayleaves, crushed
Preheat oven to 375ºF. Wash and dry fillets and season with salt and pepper.
Place fillets on buttered baking dish. Sprinkle with green onions, dot with butter. Drizzle with wine.
Sprinkle anew with parsley, thyme and crushed bayleaves. Bake for 20 minuts. When done, remove from the baking dish. Strain the pan for juices. If desired, you can combine the juices with butter, flour and cream to make a sauce that can be serve with the sole fillet.
