Sopa De Flan (French White Custard Soup)



For the custard cubes:
7 pcs. egg yolks
1 pc. whole eggs
1 can evaporated milk
pinch of nutmeg
salt & pepper

For the soup base:
6 cups rich chicken stock
salt & pepper
1 tbsp. dry sherry
2 tbsps. cream
chopped chives


Step 1

To prepare the custard cubes: Combine all the ingredients. Grease the baking pan with butter before pouring the mixture. Cover with a flat tray. Bake for 30 minutes at 350ºF in a bain marie with water level up to half of the custard pan. When cooked, cut into ½"-cubes and set aside.

Step 2

To prepare the soup: Boil the chicken stock and season with salt and pepper. Add the sherry and cloud with cream. Drop the custard cubes into the soup. Garnish with chopped chives.
