Steamed Lemon-Scented Smashed Potatoes



4 pcs. Potatoes, cleaned & quartered
zest of 1 lemon
salt & pepper
1/2 cup milk
2 tbsps. Butter



Step 1

Heat milk, butter, salt and white pepper in a 3-quart heavy saucepan set over moderate heat until butter is melted.

Step 2

Steam potatoes with lemon zest until cooked through.

Step 3

Transfer to a bowl and mash lightly; add warm milk.

Step 4

Mash until everything is combined.
